Kesari rice
Kesari rice recipe
Serves - 3-4
Preparation time - 15 minutes
Ingredients:
Rice – 2 cups
Sugar – 2-3 tablespoons
Salt – ¼ teaspoon
Cashewnuts – 10-15, whole ones
Raisins – 1 tablespoon
Cardomom – 4 pods, powdered
Saffron – ¼ teaspoon strands (this gives the deep yellow color, so use as needed)
Milk – 2 tablespoons
Ghee/oil – 2 tablespoons
Method: Boil the rice taking care not to overboil and keep it aside. Boil the sugar in 1/4 cup of water to a thick syrup. Heat a fry pan and pour in the ghee. When slightly hot, fry the cashewnuts to a pale brown color and remove them. In the same hot ghee, fry the raisins till they swell out. Add the boiled rice. Add also sugar syrup, saffron milk, salt, cashew nuts, raisins, and powdered cardomom to it. Stir thoroughly only once to mix. Keep it covered and put it on dhum for 10-15 minutes before serving. Enjoy!
