Erissery or Ericheri recipe
Ingredients:
Squash – ½ cup, cubed (variety of squash used – butternut) or Raw banana – ½ cup, cubed
Yam – ½ cup, cubed
Turmeric powder – ½ teaspoon
Black pepper – 8-10, powdered
Coconut – 1 cup, scraped and grated
Green chillies – 3, medium hot
Cummin seeds – 1 teaspoon
Oil – 1 teaspoon
Ghee – 1 teaspoon
Mustard seeds – 1 teapoon
Black gram dal – 1 teaspoon
Dry red chillies – 2-3, medium hot, broken into halves
Curry leaves – 1 sprig, 8-10 leaves
Method:
Boil one cup of water and cook yam with turmeric and pepper powders. Cook it covered on medium heat. When yam is half cooked, add pumpkin and continue cooking till both are cooked and tender. Set aside. Meanwhile grind coconut, cummin seeds, and green chillies together to get a thick smooth paste. Sprinkle only a little water while grinding. Heat a fry pan and pour in the oil and ghee. When very hot, add in the following order: mustard seeds to splutter, black gram dal to brown lightly, red chillies, curry leaves, and then the ground coconut and fry till the coconut is golden brown. Add this to yam and pumpkim. Add salt and cook on low heat till gravy is thick and dry. Serve hot as soon as it is made for a delicious flavor. Enjoy erissery.
