Spicy egg toast

Here is a tempting way of eating our bread and eggs on chilly weather and rainy days when you feel like having something spiced up and hot.

Bringing the ingredients together…

Spicy egg toast recipe

Ingredients:
Eggs – 4
Onion – 1, medium size, finely chopped
Green chillies – 2, medium size, medium hot, finely chopped
Cinnamon – ½ inch stick
Black peppercorns – 6
Garlic – 3 flakes, finely chopped
Ginger – ¼ inch piece, finely chopped
Cloves – 2
Turmeric powder – 1/2 teaspoon
Salt – ½ teaspoon
Milk – 2 tablespoons, boiled and cold
Coriander leaves - 2 teaspoons, finely chopped
Ghee/oil – 2 teaspoons per batch (4 slices)

Method: Grind the green chillies, onion, cinnamon, black peppercorns, garlic, ginger, and cloves to a smooth paste. Mix this paste into the eggs and beat up well. Add the turmeric, salt, coriander leaves, and milk to the egg mixture and beat up well again. Cut the bread into slices. Heat a shallow frying pan and pour in 2 teaspoons of ghee. When ghee becomes hot, dip a slice of bread completely into the egg batter, turn over on both sides, so that it is coated all over with the batter, and put it on the hot ghee. Do not allow the slice of bread to soak iin the egg batter for longer period of time to avoid it becoming too soggy. Remove the bread slice from the batter immediately after it is dipped and covered with egg batter. Pour some more ghee around the edges of the bread slice, if needed. Let it cook over low heat without any covering lid till it becomes a nice attractive brown color underneath. Turn it over and cook the other side also to the same brown color. Fry all other remaining slices the same way. Serve it hot and enjoy.
