VCC 174 - Sol Kadhi

Here is another delicious soup recipe which is kindly contributed by Monica Bhide to the group book project project 'You Can Cook for 'Feed a Hungry Child'.

Sol Kadhi recipe
Serves 4

Ingredients:
8-10 pieces of kokum soaked in 1 1/2 cups hot water
2 cloves garlic, peeled and crushed
1/2 teaspoon cumin, pounded
2 – 3 green chilies minced
2 cups coconut milk
Salt and sugar

Method:
1. Strain the liquid with the kokum. Discard the kokum. Some people prefer to boil the kokum with the water to help it release its flavors.
2. In a separate pot combine the garlic, cumin, green chilies, coconut milk and a touch of sugar and salt. Mix them well. Add the warm pink kokum water.
3. Mix well.
4. Chill the soup for a few hours in the fridge.
