VCC 233 - Vegetarian Deluxe Noodles
Here is another exotic dish recipe kindly contributed by Devagi Sanmugam to the group cookbook project 'You Can Cook' for 'Feed a Hungry Child' campaign.
Vegetarian Deluxe Noodles recipe
Preparation time: 1 hour
Cooking time: 10 minutes
Serves: 4
Ingredients:
6 dried Chinese mushrooms, soaked in water for 1 hour
100 g fresh shitake mushrooms
1½ tablespoons cooking oil
2 cloves garlic, sliced
3 slices ginger
100 g carrot, sliced
100 g snow peas
100 g baby corn, halved
800 ml reserved mushroom water
100 ml Kikkoman Special Fragrance Soy Sauce
½ teaspoon sesame oil
200 g E-Fu noodles
Method:
1. Remove stalks from mushrooms and drain soaked mushrooms BUT reserve the mushroom water.
2. Heat oil and sauté the garlic and ginger until aromatic.
3. Add the vegetables and sauté for 1 minute. Add the mushroom water, soy sauce and sesame oil.
4. As soon as it comes to the boil, add in the E-Fu noodles and simmer till the noodles are cooked.
5. Serve immediately.
