VCC 234 - Salted Fish Fried Rice

This classic dish recipe is another kind contribution by Devagi Sanmugam to the group cookbook project 'You Can Cook' for 'Feed a Hungry Child' campaign.

Salted Fish Fried Rice recipe

Preparation time: 20 mminutes
Cooking time: 15 minutes
Serves: 6

Ingredients:
50 g dried white bait (ikan bilis), washed and drained
Oil for deep frying
2 cloves garlic, minced
1 onion, peeled and sliced
2 red chillies, cut into 1 cm pieces
300 g small prawns, shelled
250 g green peas
1 kg cooked rice, preferably kept overnight
4 tablespoons soy sauce
¼ teaspoon caster sugar
1 teaspoon sesame oil
2 eggs, lightly beaten with ¼ teaspoon salt
3 tablespoons chopped spring onions

Method:
1. Heat oil in a wok until hot and fry white bait until crispy and golden. Dish out and drain on absorbent paper.
2. Discard most of the oil and leave only about 3 tablespoons in the wok.
3. Add the garlic, onion and chillies and sauté until onions soften.
4. Add the prawns and peas and stir-fry till prawns turn pink.
5. Add the rice, soy sauce, sugar and sesame oil. Stir-fry over high heat till well combined.
6. Make a well in the centre of the rice by pushing the rice to the sides.
7. Add the beaten egg. Cover the eggs with the rice for one to two minutes.Finally add the fried white bait and the spring onion. Toss well till well combined and serve hot.
