VCC 377 - Machli ke Aalishan Kebabs

Here is another traditional fish recipe kindly contributed by Golden Reejshinghani to the group cookbook project 'You Can Cook' for 'Feed a Hungry Child' campaign.

Machli ke Aalishan Kebabs recipe

500 grams fish steaks
1 cup beaten curds
50 grams cream
A few drops orange red food coloring
¼ teaspoon.saffron dissolved in 1 tablespoon hot milk
2 medium onions
2-inch piece ginger.
6 red chillies.
1 tablespoon garam masala.
Salt and chilli powder to suit the taste.

Cut the fish pieces into neat cubes. Grind together onions and ginger and extract the juice.Mix all the ingredients along with 4 tablespoons butter, set aside for a few hours in the fridge. Thread the pieces on skewers and grill basting frequently with the marinade till the pieces turn a rich golden color. Serve with green chutney.
