VCC 247 - Mangalorean Fatty Sardines Curry

Here is a very traditional Mangalorean fish curry recipe kindly contributed by Veena to the group cookbook project 'You Can Cook' for 'Feed a Hungry Child' campaign.

In Veena's own words, "This is Mangalorean Fatty Sardines Curry. This curry you have to make it in mud pot (matthiyeche kundlle in konkani). Next day the curry tastes more better."

Here is another very traditional Marathi sweet dish recipe kindly contributed by Deepa Joshi to the group cookbook project 'You Can Cook' for 'Feed a Hungry Child' campaign.

In Deepa's own words,

Endorsement statement: "When I learnt about FAHC campaign, I liked the idea very much. I am happy to submit this traditional and simple marathi receipe."

"This is a traditional marathi sweet dish which is prepared at the time of "makar sankranti". This can be prepared in various ways, some very simple, some quite complex. I got this very simple version from my mother. It took just 15-20 minutes to prepare and it turned out to be quite delicious."

Til-gool recipe
Preparation time - 20 min
Makes 15-20 laddoos or small shapes - around 2 per serving

Ingredients:
2 cups sesame seed powder - (made from 200 g sesame seeds)
1 cup jaggery (unrefined cane sugar) - around 200 g
1 tsp ghee
1 tsp nutmeg powder
1 tbsp cardamom powder

Method: Roast the sesame seeds until they are brown. Set aside and let them cool. Grind into a coarse powder. Grate jaggery cubes or break them into fine pieces. Blend the sesame powder, grated jaggery, nutmeg powder and cardamom powder together in a blender. Add ghee and knead. If possible make various shapes using cookie shapes or just make round laddoos.

VCC 234 - Salted Fish Fried Rice

This classic dish recipe is another kind contribution by Devagi Sanmugam to the group cookbook project 'You Can Cook' for 'Feed a Hungry Child' campaign.

Salted Fish Fried Rice recipe

Preparation time: 20 mminutes
Cooking time: 15 minutes
Serves: 6

Ingredients:
50 g dried white bait (ikan bilis), washed and drained
Oil for deep frying
2 cloves garlic, minced
1 onion, peeled and sliced
2 red chillies, cut into 1 cm pieces
300 g small prawns, shelled
250 g green peas
1 kg cooked rice, preferably kept overnight
4 tablespoons soy sauce
¼ teaspoon caster sugar
1 teaspoon sesame oil
2 eggs, lightly beaten with ¼ teaspoon salt
3 tablespoons chopped spring onions

Method:
1. Heat oil in a wok until hot and fry white bait until crispy and golden. Dish out and drain on absorbent paper.
2. Discard most of the oil and leave only about 3 tablespoons in the wok.
3. Add the garlic, onion and chillies and sauté until onions soften.
4. Add the prawns and peas and stir-fry till prawns turn pink.
5. Add the rice, soy sauce, sugar and sesame oil. Stir-fry over high heat till well combined.
6. Make a well in the centre of the rice by pushing the rice to the sides.
7. Add the beaten egg. Cover the eggs with the rice for one to two minutes.Finally add the fried white bait and the spring onion. Toss well till well combined and serve hot.

VCC 233 - Vegetarian Deluxe Noodles

Vegetarian Deluxe Noodles recipe

Preparation time: 1 hour
Cooking time: 10 minutes
Serves: 4

Ingredients:
6 dried Chinese mushrooms, soaked in water for 1 hour
100 g fresh shitake mushrooms
1½ tablespoons cooking oil
2 cloves garlic, sliced
3 slices ginger
100 g carrot, sliced
100 g snow peas
100 g baby corn, halved
800 ml reserved mushroom water
100 ml Kikkoman Special Fragrance Soy Sauce
½ teaspoon sesame oil
200 g E-Fu noodles

Method:
1. Remove stalks from mushrooms and drain soaked mushrooms BUT reserve the mushroom water.
2. Heat oil and sauté the garlic and ginger until aromatic.
3. Add the vegetables and sauté for 1 minute. Add the mushroom water, soy sauce and sesame oil.
4. As soon as it comes to the boil, add in the E-Fu noodles and simmer till the noodles are cooked.
5. Serve immediately.

VCC 232 - Jam Cookies

This delicious cookie recipe has come from Singapore kindly contributed by Devagi Sanmugam to the group cookbook project 'You Can Cook' for 'Feed a Hungry Child' campaign. Let me also share with you today that Devagi has written 14 cookbooks and owns a restaurant in Singapore.

Jam Cookies Recipe

Preparation time: 15 minutes
Baking time: 25 minutes
Makes: 24 cookies

Ingredients:
220 g butter, room temperature
120 g caster sugar
2 egg yolks
1 teaspoon vanilla essence
Grated zest of half a lemon (optional)
200 g plain flour, sifted
¼ teaspoon fine salt
80 g ground hazelnut
150 g raspberry jam or your choice of jam

Method:
1. Put butter and sugar into a mixing bowl and beat with a wooden spoon until fluffy.
2. Add the egg yolks, vanilla essence and lemon zest.
3. Beat to combine well.
4. Add the flour, salt and ground hazelnut. Mix to combine well into a soft pliable dough.
5. Preheat oven to 180°C.
6. Line baking trays with non-stick paper.
7. Roll the dough into 2.5 cm balls. Place on the prepared baking tray about 2 cm apart.
8. Using your thumb or end of a wooden spoon, make a deep indentation in the center of each cookie.
9. Bake for 20 minutes or until cookies are set and lightly brown on the bottom.
10. Remove from oven and place on wire rack. If the centers of the cookies have risen, use the end of a wooden spoon to gently make the indentation again.
11. Remove cookies from baking tray and leave on a wire rack to cool completely.
12. When cookies are cool, spoon a little jam into the center of each cookie.

Note: You can store the unfilled cookies for about a week. I like to fill the cookies with jam on the day I serve them.

In Seema's own words, "Here is a very unique recipe from my MIL - I call it Coconut Paratha which tastes so much like "biscuit rotti". I am sure that most of the us from South India are familiar with the taste of biscuit rottis. There is a small goodangadi (shop) in Coorg that makes amazing biscuit rottis and every time we used to go from M'lore to B'lore it would be a sure stop there. Altho' they were deep fried and made of maida it used to taste so yummy that would definitely be on the menu for meals. You guys should surely try this out - it tastes amazingly good, very similar to the goodangadi biscuit rottis; but surely is a healthier version of biscuit rotti ."

VCC 195 - Pal Poli

Here is another traditional recipe kindly contributed by Viji Jeyakumar to the group book project project 'You Can Cook for 'Feed a Hungry Child'.

In Viji's own words, "Pal poli is one of our traditional sweets famous for its own taste. There are many ways to prepare this sweet poli – with rava (semolina), maida or mixed one. If you use plain rava, you might need the traditional grinder – kallural to knead the flour. But the taste is very good. I used to make it with rava and maida – 50:50. Here is my version for this Pogi. Very delicious and easy to prepare. You will enjoy its rich taste."

This classic egg pilaf recipe is kindly contributed by Nupur Kittur, to the group book project project 'You Can Cook for 'Feed a Hungry Child'.

Story behind the recipe in Nupur's own words, "Egg pilaf is my attempt to make a quick and simple dish that is aromatic and comforting, and nutritious at the same time. Biryanis and pilafs are popular North Indian dishes, and this is a simplified version for the busy home cook. This dish is easyenough to make on a weeknight and special enough to serve to guests."
